Preheat oven to 400 degrees. |

Coat oil into oven-safe cast iron skillet and coat the sides. |

Heat skillet for 2 minutes on stove top on medium high. Whisk together the eggs and milk. Add in vegetables to mixture and pour all into skillet. |

Heat until the sides start to cook (about 4-6 mins). |

Transfer to oven and cook for 15-20 minutes or until the liquid has set. (optional) Heat under broiler for 2 minutes at the end for a nice brown crust. |
