1/2 tbsp Red Curry Paste
1 cup Organic Vegetable Broth
1 cup organic peas
1/4 cup chopped Cilantro
1/8 cup sliced organic carrots

1/8 cup Organic Super Grains
1 potato peeled and chopped Organic Yellow Potatoes
1/2 cup Organic Chickpeas

    Cook the super grains according to the instructions on the package.

    In a large pan, heat some oil and sauté the onion for 2-3 minutes. Then add the potatoes and cook for another 3 minutes. Stir in the red curry paste and the curry powder and cook for another minute.

    Note: Carrots can be purchased already chopped or shredded (usually in produce aisle).
    Add the coconut milk, vegetable broth, carrot, drained chickpeas, and peas and cook for about 20 minutes.

    Season with salt and pepper and serve with cilantro.
