Preheat oven to 400 degrees.

Coat oil into oven-safe cast iron skillet and coat the sides.

Heat skillet for 2 minutes on stove top on medium high. Whisk together the eggs and milk. Add in vegetables to mixture and pour all into skillet.

Heat until the sides start to cook (about 4-6 mins).

Transfer to oven and cook for 15-20 minutes or until the liquid has set. (optional) Heat under broiler for 2 minutes at the end for a nice brown crust.
