Step 1Drain beans and dice onion. |

Step 2Preheat oven to 375 degrees F (190 C) and lightly grease a 9x13 baking dish or rimmed baking sheet. |

Step 3Cut peppers in half (top to bottom) and remove seeds and stem. Brush halved peppers with olive oil. |

Step 4Add cooked beans to a large mixing bowl, squeeze juice from limes and add remaining ingredients (exluding pico, onion and avocado). Mix to thoroughly combine then taste and adjust seasonings accordingly, adding salt, pepper, or more spices as desired. |

Step 5Generously stuff halved peppers with beans mixture until all peppers are full, then cover the dish with foil. Bake peppers for 20 to 25 minutes. |

Top with pico, diced onion and avacado and serve. |
